Beer Haunts in Bruges: Café Rose Red
Bruges is of a piece with those other mid-sized European cities I hold dear, places like Bamberg and Salzburg. There’s something about these mid-sized towns. Grand as their architecture is, and as illustrious their histories, their winding streets and quiet plazas are still human-scale. Their warmth draws you in. These are the kinds of places I’ve returned to time and again over the decades.
Old Favourites, New Discoveries
I hadn’t been to Bruges since before the pandemic. Almost an eternity. And R, my partner-in-crime, had never been to Belgium, let alone Bruges. We killed two birds with one stone recently with a few days in this enchanting city to visit some of my old favourites like Brugs Beertje and search for new haunts.
One of those new places was Café Rose Red. Tucked away on a side street not far from the Grote Markt, Rose Red is everything an intrepid beer traveler could want: an extensive beer list, knowledgeable staff, food several notches above average, and a dimly lit space with a touch of elegance that recalls De Garre.
It was bustling when we arrived, a mix of well-attired middle aged folks, younger couples on dates, their faces illuminated by candlelight, and the occasional beer traveler scouring the extensive beer menu.
Décor-wise, Rose Red is a mélange of different spaces. When it’s less busy, you can pick your table according to your mood. The main section just off the entrance has more of a “beer café” feel, with hardwood floors, warming wood accented by burgundy walls, and large white-framed windows. We ended up in a redoubt beyond the main room, a cross between gothic lounge with sofas and a red curtain backdrop and tables set for romantic tête-à-têtes.
Busy as it was, the servers took the time to give us suggestions for navigating the beer list. Even if you’re an old hat in Belgium, the servers are sure to point you in the direction of more than a few pleasant surprises, like a Gose (yes, a Gose and not a geuze) from a tiny brewery in a nearby town.
Fine Beer, Fine Food
And that beer list! A tour de force of Trappist beers, a smattering of IPAs and stouts, a slew of vintage geuze bottlings (including over two dozen from 3 Fonteinen alone), and a page of specials that don’t quite fit under other headings. It was here that I found the sublime 2013 Tjeeses Riserva port barrel-aged beer from Struise.
I mentioned the food already, but it’s worth dwelling for a moment on what really sets this place apart. We didn’t come here with the intention of having a meal. Just a few beers, we thought, then we’d head somewhere else. That was until the menu piqued our interest: Belgian classics, but also food with an international flair. Picanha prepared in the style of vitello tonnato. Pan con sobrasada. Gyoza. The list went on.
We settled on the tartiflette (potatoes with bacon gratinéed with Reblochon cheese) and the witte pens, a tasty white sausage meant to resemble a local white tripe dish, and served with red berry confit and pickled mayonnaise. Hungry yet?
A Rose By Any Other Name
As for the name of the place? Regardless of where in Rose Red you end up sipping or supping, it’s hard not to notice the red thread, as it were, tying the disparate design elements together: the namesake red roses hanging upside down from the rafters. Apparently the name is an homage to Stephen King’s Rose Red.
Somehow, though, this elegant beer café doesn’t put me in the mind of haunted house stories. But maybe that’s beside the point when you’re looking for your next favourite beer haunt in Bruges.

Was just there in August, absolutely one of the best beer bars with a mind blowing beer list. Cheers!
That beer list is something, especially the gueuze list. Cheers to you, too!
Added to the “to-do” list for my summer trip to the Belgique.
It’s quite a nice place. Tasty food. And that gueuze selection!
